Nestled right in the heart of the vibrant North Loop, we’re serving up flavors and vibes inspired by Central America, the Caribbean (especially Panama!), South America, and even the soulful kitchens of Southern Louisiana.

But here’s the thing — we’re not just here to feed you. We want to share our story, our roots, and the culture that shaped the dishes you see on our menu. A Dream Built from Our Home to Yours

Guacaya Bistreaux wasn’t born in a boardroom—it was born in our home, around our dinner table. My wife, Alexandra, and I started this journey before and during the pandemic, bringing people together over food, culture, and community. Every other weekend, we transformed our apartment into a dining experience, serving five-course meals to complete strangers—all brought together through word of mouth and our newsletter, The Underground Minneapolis.

Those nights were filled with laughter, storytelling, and the rich flavors of Afro-Caribbean and Louisiana cuisine. They were a taste of the culture we longed for after relocating from New Orleans to Minneapolis. We deeply missed the food, soul, and hospitality of the city that brought us together, so we decided to create it ourselves.

Fast forward, and what began as intimate dinners turned into something much bigger—a brick-and-mortar restaurant built with our own hands, our savings, and the generosity of family, friends, and our community. Unlike many restaurants, Guacaya Bistreaux isn’t just a business—it’s our home. From the art on the walls to the warmth of Southern hospitality in every detail, we’ve poured our hearts into this space.

When you walk through our doors, you might be greeted by my mother, Mimi, welcoming you like family, or taste the love Alexandra pours into each menu she crafts—though you may not see her, as she’s home caring for our little ones. You’ll experience the influences of my Panamanian roots and the Afro-Creole heritage of my wife, who was born and raised in Orleans Parish. Our story is told through every dish, every cocktail, and even the words printed on our menu—quotes from women of the Civil Rights Movement, reminding us of the struggles fought for a seat at the table.

We are proud to be a Black and Brown-owned, family-run restaurant—the only one of its kind in the North Loop. In a neighborhood surrounded by corporate restaurant groups, we stand as one of the few true mom-and-pop establishments left in downtown. This is our version of the American Dream, and we are here because of you—our guests, our supporters, our extended family.

As we celebrate Black History Month, Hispanic Heritage Month, and the cultures that shape us, we do so with pride and joy.

Hola amigos! If you’ve dined at Guacaya Bistreaux, you’ve likely met “Mimi” – the warm and welcoming soul who makes every guest feel like family.


As the only family-owned and operated restaurant in the North Loop, we take immense pride in creating a space that feels like home. Surrounded by sleek restaurant groups, Guacaya Bistreaux stands apart as a true “mom-and-pop” gem, infused with heart, history, and a personal touch you won’t find anywhere else.


Mimi, the mother of Chef Pedro Wolcott, is the embodiment of our hospitality. Born in Panama and now residing in New Orleans, she makes special trips to Minnesota to help run the family business. Whether she’s greeting you at the door or stopping by your table to share a story, she ensures every guest feels appreciated. Her warmth, charm, and unmistakable Southern hospitality create lasting connections, turning first-time visitors into lifelong friends.


At Guacaya Bistreaux, we don’t just serve food—we share our culture, our love, and our family traditions. And thanks to Mimi, every meal comes with a side of heartfelt hospitality. After all, where else in the North Loop will you be greeted by the chef’s own mom?
