Pedro Wolcott, Chef & Owner

Born and raised in Penonomé, Panama, Chef Pedro found his culinary inspiration at a young age, learning from his abuela and mother—both passionate family cooks.

In the early 2000s, Pedro immigrated to New Orleans, where he fell in love with the vibrant Cajun and Creole flavors that define the city’s cuisine. After Hurricane Katrina, he moved to Las Vegas, honing his craft at The Voodoo Steakhouse before spending over six years as Chef de Partie at The Venetian Palazzo under Chef Olivier Dubreil.

Eventually, Pedro returned to New Orleans, where he met his wife, Alexandra. Together, they set their sights on new culinary adventures. Pedro continued refining his skills in some of the most acclaimed kitchens in New Orleans, working with Chef Donald Link at Cochon Butcher, Emeril’s NOLA Restaurant, the world-renowned Commander’s Palace under Chef Tory McPhail, and Baru Bistro with Colombian Chef Edgar Caro.

In Minneapolis, Pedro and his family brought their vision to life by opening Guacaya Bistreaux. The restaurant offers a welcoming space that blends the rich flavors of Latin America and the Afro-Caribbean diaspora with the bold, soulful tastes of Louisiana—a tribute to Pedro’s journey, heritage, and passion for creating memorable dining experiences.
